HUSH Bistro opened its doors in downtown Farmingdale in the fall of 2014. A year in the making by Long Island top chef Marc Anthony Bynum, the new Modern American restaurant delivers an innovative earth to table menu with emphasis on local and organic flavors enhanced by traditional and new cooking techniques. Bynum’s resume includes top tables throughout Long Island such as Four Food Studio, Tellers, Prime Restaurant and Venue 56 as well as two victories on the Food Network’s competitive cooking show Chopped and a subsequent stint on Chopped Champions. Now after 20 years in the industry, Chef Bynum brings his knowledge and his passion to his hometown offering diners an authentic and memorable culinary experience.
HUSH Bistro, rated 3 stars in NY Times, offers an intimate 1,000 square foot space in the heart of Farmingdale. Designed by M. Bynum Designs and Lauren Bynum, the interior exudes an industrial chic ambiance reminiscent of a classic 1920s speakeasy. Concrete floors and open ceilings with exposed plumbing are accented by grey painted walls adorned with vintage style sconces. The centerpiece of the room is a hand-painted mural on the back wall by artist Jared Long depicting Farmingdale in the 1920s and today. Antiques are evident through the refurbished and repurposed salvage yard pieces from fellow Farmingdale native Dusty Amodio of Rebel and Nail Design. Dining tables are singer sewing machine table bases topped with reclaimed custom wood tops and the host stand is a repurposed newspaper printing press. The 24-foot granite topped mahoghany bar lit by pendant light fixtures offers a view of the custom designed open shelving featuring the local spirit selection. The open kitchen offers a look behind the scenes as Chef Bynum prepares his daily culinary creations. Despite its small space, the atmosphere at HUSH Bistro is comfortable and convivial, as if diners were enjoying a meal in Bynum’s home.

Chef Bynum’s menu focuses on organic and sustainable product found on Long Island wherever possible. As the restaurant’s name intimates, Bynum believes in enhancing and elevating the flavors of the fresh ingredients thus allowing the food to speak for itself.
The wine, beer and cocktail list also focuses on small batch items with a splash of local products. There is a limited selection of beers with a highlight of Long Island brews. The cocktail menu features a creative offering of concoctions. A few sample cocktails include: HUSH with bourbon, Yelp Awarded Floridora, and 2nd place New York Craft Cocktail Bynum Bramble.
